Restaurant Botanica, Hunter Valley

Barely a week ago, this was us.

Dining in the middle of a vineyard, with wild kangaroos hopping about, on a sunny winter’s day.
Starting with crispy skin trout on caramalised pork belly with pawpaw.
Having the most spectacular duck confit with braised red cabbage, orange and cardamom relish.
And then some local bred venision, with roasted garden beetroot and goats curd.

I’m feeling hungry all over again just looking at the photos!
